Classic chicken Kyiv

Ingredients (for 4 servings):

  • Chicken fillet — 4 pieces
  • Cold butter - 100 g
  • Fresh herbs (parsley, dill) - 20 g
  • Fresh garlic - 1 clove
  • Salt — to taste
  • Black pepper — to taste
  • Eggs - 2
  • Bread crumbs - 150 g
  • Flour - 100 g
  • Vegetable oil for frying - 300 ml

  • Step-by-step Recipe:

    1. Prepare the filling:
    1.1. Finely chop the herbs and press the garlic (if you want to use it).
    1.2. Mix the butter with the herbs, garlic, salt, and pepper. Shape the mixture into 4 small cylinders. Freeze them for 15-20 minutes until firm.

    2. Prepare the chicken fillet:
    2.1. Slice each fillet lengthwise to create a "pocket," but don't cut all the way through.
    2.2. Pound the chicken lightly to make it thinner but without tearing. Season with salt and pepper.

    3. Form the cutlets:
    3.1. Take the frozen butter cylinders.
    3.2. Place a cylinder in the center of each fillet and carefully wrap the chicken around it, forming an oval-shaped cutlet. Secure the edges with toothpicks if necessary.

    4. Bread the cutlets:
    4.1. Coat each cutlet in flour, then dip it in beaten eggs, and roll it in bread crumbs. For an extra crispy crust, repeat the breading: egg bread crumbs.

    5. Fry the cutlets:
    5.1. Heat a generous amount of vegetable oil in a deep frying pan or pot.
    5.2. Fry the cutlets on medium heat until golden brown (about 2-3 minutes per side).

    6. Finish in the oven:
    6.1. Transfer the fried cutlets to a baking tray and bake them in a preheated oven at 180°C (350°F) for 10-15 minutes.

    7. Serve:
    Remove the toothpicks and serve the cutlets hot with a side dish like mashed potatoes.
