Moroccan beef kefta meatballs meatball and semolina

Today I'm going to introduce one of my favorite dishes, Sardine Meatballs Tajine.  Tajine is a signature Moroccan cuisine made in a special clay pot called tajine. All dishes made in it carry its name as well.  

INGREDIENTS

  1. Meatballs
  • 500 g fillets of sardine                 
  • 3 ground garlic cloves   
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika 
  • 1/2 teaspoon cumin 
  • 1 tablespoon lemon juice 
  • 1 tablespoon rice
  • 1 tablespoon minced parsley
  1. Sauce
  • 2 tomatoes  
  • 3 ground garlic cloves
  • 2 tablespoon olive oil
  • 1 tablespoon salt
  • 1 onion
  • 1/2 teaspoon black pepper 
  • 1/2 teaspoon paprika
  • 1/2 cumin 
  • 1/2 teaspoon curcuma (turmeric)  
  • 1 tablespoon minced parsley 
  • 1/2 teaspoon hot pepper
  • 1 tablespoon minced celery
  1. Toppings
  • 2 carrots                                                                   
  • 2 Bell pepper preferably in different colours           
  • 1tablespoon olives
  • Minced parsley                                                             

METHOD

  1. Grind the sardine fillet with garlic and mix with all ingredients listed under meatballs, and make small balls.  
  2. Cut the tomatoes and onion into small cubes, and put them in a tagine, and add the garlic and olive oil. On a medium fire put the tajine, and keep stirring the mixture until it starts bubbling, and add all species, lemon juice, the minced parsley and minced celery, and turn the fire to slow mode. 
  3. Cut carrots into big cubes and add it to the sauce. After 10 minutes add the sardine meatballs, decorate the top with colorful peppers. After 20 minutes turn off the stove, and garnish with minced parsley and olives.
