Caesar salad with crispy bread and bacon close up on wood background

This simple recipe it’s a must at our home every week. My mother- in-law, taught me how to do it.  We love how versatile it is. We sometimes add cooked chicken and make caesar wraps too. Enjoy!

Ingredients

For the dressing:

  • 2 cloves of garlic pressed
  • 2 egg yolks
  • ½ tsp salt
  • ¼ tsp pepper
  • ¼ tsp dry mustard
  • 1 tsp of dry oregano
  • 1 capful of white vinegar
  • 1 capful of red wine vinegar
  • 1 capful of lemon juice
  • 1 cup of canola oil

Remaining ingredients:

  • Romaine lettuce chopped in pieces
  • ¼ cup of Parmesan cheese
  • 6 (or more) slices of crispy bacon
  • Croutons

Directions

Step 1:

Mix all the dressing ingredients together with a mixer on medium-high speed and slowly add the oil until it’s a creamy mixture.

Step 2:

In a bowl, add the remaining ingredients except for the croutons which will be added last to avoid getting soggy. Pour the dressing and toss, making sure that it’s well coated and then add the Parmesan cheese.
