Recipes

Tsbhi derho is a traditional dish from my birthplace, Eritrea. It is the main dish there, and many people enjoy it because it is spicy and delicious. More children love this dish very much. It’s usually served as a main dish, and I sometimes change the recipe like adding a boiled egg and a bit of water to adjust the texture.

Ingredients:

  • 1 large chicken cut into 12 pieces (traditionally, it is always 12 pieces)
  • Medium red onions - 6 pcs.
  • Tomato paste - 2 tbsp.
  • Paprika powder - ½ cup
  • Vegetable oil - 2 tbsp.
  • Water - 2 cups
  • Garlic - 5 cloves
  • Ginger - 3 inches
  • Black pepper - ½ tsp.
  • Salt - 1 tsp
  • Butter - ½ tsp.

Peel and chop the onion, then fry it in vegetable oil until soft. Add paprika powder and tomato paste, and continue frying for about 15 minutes. Pour in 2 cups of water and let it cook for another 15 minutes. Add minced garlic, grated ginger, black pepper, and salt to taste. Mix the chicken well with the sauce and cook for 15 to 20 minutes. Finally, add a bit of butter and continue cooking until the chicken is tender. Serve with Injera (teff flour) bread and sides.
