Stir-fry Eggplant Recipe

Today, I’d like to share a stir-fry eggplant dish with you. To start off with, preparing ingredients as following:
- Eggplants: 2
- Minced pork: 50g
- Salt: 4 g
- Garlic: 6 pieces
- Red /green bell peppers as needed
(you can use onion or whatever vegetables you like)
- Water starch
(starch :2 g, 1/2 teaspoon, Water: 30 g, mix it tighter)
- Broad beans and chili sauce: 10 g, 2 tablespoons
- Vinegar: 5 g, 2 teaspoons
- Sugar: 2 g, 1 teaspoon
- Soy sauce 5
- Flour: 20 g
- Oil for frying: 1.5 cups
Now, let’s start.
Step 1.
Cut 2 eggplants into blocks and put them in separate bowl.
Lightly sprinkle salt and mix with hand. Wait for 15 minutes.
Step2.
Cut the garlics, red and green peppers.
Step 3.
15 minutes later, there would be water on the surface of the eggplant blocks, using the water on the surface of the eggplant blocks to stick some flour. The eggplant blocks are covered with a thin layer flour.
Step 4.
Put oil into a pan and turn the heat on medium high. When the oil is hot, put eggplant blocks into the hot oil pan frying for about 1 minute. Then, take them out. After frying, every eggplant block is bright purple.
Step 5.
Put a little bit of oil into another pan. Place garlic pieces and minced pork to stir-fry when the oil is not too hot.
Step 6.
When the surface of the minced pork starts brown, add broad beans and chili sauce to fry until you can smell an aroma.
Step 7.
Add red/green peppers and eggplant blocks. Eggplant blocks are cooked fast, so they do not need to be fried fry for too long.
Step 8.
Add vinegar, sugar and soy sauce and fry for a few minutes.
Step 9.
Add water starch. Now the flavor of ingredients is wrapped around the eggplant blocks. Take them out of the pan and put on the plate.
The eggplant tastes like meat with a little bit sour, sweet and spicy taste. It is a very delicious home cooking dish.
