Prep time: 10 min
Cook time: 40 min
Servings: 12 people

Ingredients

  • 2 boxes macaroni (any type)
  • 2 cans evaporated milk
  • 1 stick butter (1/2 stick for sautéing the onions and peppers, and the other 1/2 stick for the sauce)
  • 1 small onion
  • 1/2 of a green, red, orange, and yellow bell pepper (diced or minced)
  • 1/4 cup flour
  • 8 oz mild cheese
  • 8 oz mozzarella cheese
  • 4 oz cream cheese
  • 1/4 cup parmesan cheese
  • 1 1/2 tsp black pepper
  • 1 1/2 tsp onion powder
  • 1 1/2 tsp garlic powder
  • 1 tbsp paprika
  • 1 tbsp seasoning salt

Directions

Add 1/2 stick of butter into a frying pan, add diced peppers and diced onion, and let it cook until the bell peppers and onion are soft. Remove the sautéed onions and peppers from the stove. Then, add the other 1/2 stick of butter, 1/4 cup flour, and 2 cans of evaporated milk. Stir until the milk thickens, continuing to stir constantly.

Add 8 oz extra sharp cheese, 8 oz mild cheese, 8 oz mozzarella cheese, 4 oz cream cheese, 1/4 cup parmesan cheese, 1 1/2 tsp black pepper, 1 1/2 tsp garlic powder, 1 tbsp seasoning salt, and 1 tbsp paprika. Mix in the onion and pepper mixture until it looks crumbly.

In a baking dish, combine the macaroni and the sauce. Mix everything together, and then grate some cheese on top.

Bake at 350 degrees for 40 minutes or until it is golden brown. Wait 15 minutes before serving as a side dish.
