a stuffed flatbread from the Afghan cuisine

Bolani is a traditional Afghan dish often enjoyed at informal gatherings and outdoor events. Bolani preparation can be a collaborative effort as it involves various steps and can be time-consuming. Many individuals enjoy cooking bolani as a hobby or as part of a social activity. Bolani recipes can vary, allowing for customization based on personal preferences. Some people like bolani mixed with meat for example, chicken with green onion and rolled beef with potato.

INGREDIENTS

  • Green onion - 500 g
  • Potato - 500 g
  • Garlic - 2 cloves
  • Salt - as needed
  • Black pepper - as needed
  • Oil - 200 g
  • Flour - 1 kg
  • Yeast - 1 tsp
  • Baking soda - 1 tsp

Equipment

  • Frying pan
  • Tongs
  • Spatula
  • Round cutting board
  • Chef’s Knife
  • Rolling pin
  • Bowl
  • Potato masher

Cooking Instructions

First, we make the dough. Mix the flour together with the yeast, salt, and baking soda. Add the mixture of warm water and let it rest for 1 hour. Then, we boil the potatoes, mash them with the potato masher and after that mix with green onion, garlic and add salt, black pepper, and tomato sauce. Later, we cut the dough and thin it with a rolling pin and put the prepared ingredients into the dough and after that fry it in a pan for about 1 minute. Now it is ready to eat with tomato sauce.
