Recipe for Awameh

Ingredients:

  1. 2 cups of all purpose flour
  2. 1 tsp instant yeast
  3. 1/2 tsp baking powder
  4. I tbsp. vegetable oil
  5. 1 cup water
  6. 2 tbsps sugar
  7. 1 tbsp custard powder
  8. 1 cup yogurt + water

Sugar syrup for Awameh should be kind of thick.

Directions to make syrup:

  1. 3 cups sugar
  2. 2 cups water
  3. 1 tsp lemon juice
  4. 1 tsp rose water

Add the sugar to water and put on stove for cooking. After it starts boiling add 1 tsp lemon juice to it. Boil for another 15 minutes on low heat. Then let it cool for 3 hours before using it.

For the Awameh:

Instructions:

Mix all the ingredients well and then let it rest for one hour. After an hour stir well to get rid of all the bubbles. Then put the sour dough in a plastic bag. Cut the tip of the plastic bag. Heat the vegetable oil. Once the oil is hot, slide the sour dough mixture gently in hot oil by pressing it out of the hole in the plastic bag. Remove them when half fried and light golden in color. Let them cool and then fry them again till they are light brown in color. This re- frying makes them crispy. Now, dip them in the cold sugar syrup for 10 minutes. Remove and serve them on a plate.
