One of my favorite activities is cooking, especially Colombian food. I am going to share one of my favorite recipes.

Ajiaco

This a potato soup. It is the most important dish in the Colombian capital. Please try to make it.

For: 4 people

Ingredients:

  • 8 russet potatoes
  • 2 corn cobs
  • 10 criolla potatoes
  • 2 chicken breasts
  • 1 clove of garlic
  • 1 onion
  • 1 coriander stem
  • 1/2 cup milk or cream
  • 2 avocados
  • 1 onion wedge
  • 1 bay leaf
  • salt to taste

Instructions:

  • Wash all the vegetables and the chicken.
  • Potatoes should be cut into small slices, cut the ears of corn into 3 parts each.
  • Prepare the salt, the garlic, the onion wedge, the bay leaf.
  • Then in a large pot, put 5 cups of water and bring it to a boil.
  • Put the chicken, corn, garlic, bay leaves, onion wedge, and salt in the pot.
  • Cook for 20 minutes add the russet and criolla potatoes.
  • Remove the breasts. Leave the preparation for another 20 minutes and test that the potatoes are ready.
  • Let the breasts cool, then shred and put them back in the pot.
  • Taste for flavour and seasoning and adjust.
  • Serve the soup, add milk or cream, and serve with avocado and white rice.
