This Famous Traditional Chechen Food “Galnesh”

We, the Chechen’s, like garlic so much and it’s always been a part of our dishes for a reason. 

The Chechen's used to live a long time ago on the top of the Caucasus Mountains in the deep wild nature. Garlic special smell prevents poisonous animals to get close to humans and it protects them in the wild.

"Galnesh" is one of the most popular dishes among Chechens. Galnesh is composed of garlic and soup that has meat in it. The sauce is called "Bieram". The soup which we boil the meat and the Galnesh is called "Chorp".

Ingredients:

  • 4- 5 pieces of meat or chicken
  • 1 large onion
  • 5 cloves minced garlic
  • 1 cup flour per person (flours are mixed ¾ whole wheat flour and ½ white flour)
  • 1 tsp Salt
  • 1 tsp Black pepper

This can be cooked with chicken or meat pieces. Prepare a saucepan, cut one onion in half and add the meat, a pinch of salt and black pepper. Then add two cups of water and get it to boil. Simmer on low heat for 45 minutes.

While the meat is cooking, the dough should be prepared. In a bowl, mix flour with a pinch of salt. Then cut the dough into very small long cylinder pieces 5 cm long.  Put them in sequence on a flat plate till the end of the dough.

When the meat is cooked, you can add the cylinders to the soup and boil it for 20 minutes.

Pour the cylinders shape dough on a big plate then put the Bieram of garlic sauce in the middle of the dish, lastly, put the meat on top of the Galnesh. You can eat each Gal with a fork after dipping it into the garlic sauce. You can have a mug of the Chorp to drink along with it.
