Stuffed Yabrak with rice and grind meat.

Yabrak is kind of Syrian traditional food. My kids love to it and it reminds me of my mother’s cooking when I was young. So, one Syrian habit in the summer is that we must freeze a large number of grape leaves for the winter. This dish takes about 4 hours to prepare and cook. Yabrak is served warm and with meat.

Ingredients

  • Jar of grape leaves (33.8 OZ )1L
  • 8 small cloves garlic
  • 3 cups short white rice
  • 2 teaspoons olive oil
  • 1cup lemon juice
  • 2 pounds red meat 
  • 1 cup diced tomatoes
  • 10 ounce can tomato sauce
  • 1 teaspoon salt 
  • 1 teaspoon black pepper.

Instructions

  1. Bring a small pot, put the white rice and gently wash them.
  2. Do the same thing with grape leaves.
  3. Bring a large pot, put the white rice and red meat, add 2 teaspoons olive oil,1teaspoon salt and black pepper, diced tomatoes and the can of tomato sauce, mashed garlic, and mix all of them together.
  4. Bring one of the grape leaves and put 1 teaspoon of the mixture (rice /meat). Roll it and do that for all of them.
  5. Place them lengthwise in the pot. Continue to layer the remaining ingredients ending with the grape leaves.
  6. Add cold water on them and then add 1teaspoon of salt and 1teaspoon of black pepper.
  7. Cover the cooker and put the fire in the first level.

NOTE

Before you finish cooking, add 1cup of lemon juice.
