Congolese cuisine, Traditional assorted African dishes, Top view.

I want to present an African recipe from my country Ivory Coast:  the palm seed sauce with pounded plantain. It’s one of my favorite foods. It takes a long time to achieve. It is eaten on special days like weddings, baptisms, anniversary, the day of the country. It is not at all complicated, but takes a long time to cook.

The cooking takes 3 hours for a perfect top sauce. If you are on a diet, is not for you because it is greasy food.

There are the ingredients:                              

  • palm nut
  • 2 kg of palm nuts
  • 2 kg of sheep
  • 500 g crab
  • 1 smoked fish
  • 3 Onions
  • 2 garlic heads
  • Scallions
  • 4 bay leaves / White pepper / Salt
  • 140 g concentrated tomato

Wash and clean all ingredients and separate them.

Preparation

First, wash the palm nuts and boil them for 45 minutes. The nut will cook and become soft, and secondly, crush the nuts and recover filtered juice.

Third, grill the meat, crabs, onions, garlic and tomato and added spices, salt and white pepper for 30 minutes.

add the juice of the nut, and cover the pan and cook for another 60 min.

The smoked fish must be gradually added and left to cook for 30min.

Finally, the banana plus the cassava are peeled, cleaned and cooked for 40 min before mashing and mixing.

It is ready!!! Good Appetit it smells good.
