Here is a popular recipe in my country that I like to make sometimes.

Ingredients: (to taste)

  • Whole fish, small enough to fit into a pan (not deboned)
  • Vinegar or lemon to clean\
  • Olive Oil to fry
  • Hot Sauce: Mitmita

Spice Rub

  • Salt
  • pepper
  • Curry Powder
  • Minced Garlic
  • Soya Sauce

Steps:

  • First wash the fish in lemon or vinegar, depending on your taste
  • Then, take the spices and mix them together in a large bowl
  • Next, use the spice rub on the fish and in the cavity and let it sit for 15 minutes
  • Pour olive oil in the frying pan enough to sit in without covering
  • Place the fish in the warm oil until it has changed to a brownish colour (5-10 minutes depending on the oil’s heat)
  • Then turn it to the other side
  • Take it out when it turns brown and place it on the serving platter with paper towels to absorb the oil
  • Cut a lemon ; add juice and salt to taste
  • Serve with salad potatoes and hot sauce.

*Note: some recipes have the fish only slightly fried on each side without browning

There is a second easier and faster way to prepare this fish

Wash the fish in vinegar. Mix together the minced garlic, parsley and pepper In another bowl, add one egg, lemon and about a half-cup olive oil; sit the fish in this and let it marinade for 15 minutes. Bake in a 350 degree oven for 20 minutes.
